Shirako is Japanese for ‘white children’ and it is creamy fish dish which consists of the testicles of the cod fish. It is available fresh in winter time and the sperm bags are taken from cod, fugu, monk fish and angler fish. It has a soft subtle taste to it and is best served over white rice.
